Preheat oven to 350 F.

Place raisins in a medium bowl and pour over with beer until covered. Set aside for 20 minutes or so.

In a measuring cup, pour in soy milk and add apple cider vinegar. Set aside for 20 minutes.

Mix remaining dry ingredients in a large bowl.

Prepare a pie plate by coating with cooking spray or lining with parchment.

When plump, drain raisins.

Pour drained raisins into flour mixture and combine.

Add in "soured" milk and stir until combined.

Spoon dough into prepared pie plate and spread evenly. Sprinkle with a little sugar if desired.

Bake for 30-35 min until golden and toothpick inserted comes out clean.

Cool on rack.
