Chickpea Salad Sammy

Vegan, oil-free, gluten-free and loaded with flavor, this chickpea salad is hands down the best!

Ingredients

  • 1 can (15 ounce) garbanzo beans (chcikpeas) drained, reserve liquid for another use
  • 2 stalks celery diced
  • 1 medium shallot minced
  • 1 tbsp sweet pickle relish

dressing

  • 1 tbsp tahini paste
  • 1 tbsp fresh lemon juice
  • 1 tsp rice vinegar
  • 1 tsp (or less) celery salt
  • 1/2 tsp dry mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Instructions

  1. Mix chickpeas, celery, shallot at relish in a medium bowl and lightly mash.

    In a small jar combine remaining ingredients. Shake well.

    Pour dressing over chickpea mixture. Toss well.
