Chaucer wrote (in Canterbury Tales): “woe to the cook whose sauce has no sting,” and by sting, I assume he meant flavor or punch or character. Well, my friends, there’s no woe-ing here because this simple whipped avocado sauce has all three, plus it’s vegan and gluten-free. And, it STAYS GREEN! (at least overnight as there was none left after lunch today).

The Secret is in the Sauce

Ok, I am not trying to turn this post into a quote fest, but I do love the line from Fried Green Tomatoes– “secret’s in the sauce” because, let’s face it, it’s true. I mean as far as something that can make or break a dish, the sauce is key. Think about it…pasta without tomato sauce? mac and cheese without the cheese sauce? You get the picture. This seems to be especially true with vegan cooking, and maybe that’s because most of us vegans grew up omnivores. At least I can speak for myself here in saying that before coming to the dark side, my recipe repertoire was surprisingly limited. I generally thought in terms of the meat and the veg and the starch (“oh my!”) I have found that, like many vegans, I have expanded my foodiversity (should be a word!) by trying new fruits and vegetables and nuts and beans and combinations thereof. Add with that, I dabble in new ways of working with plants and spices and techniques to come up with ever more interesting and flavorful ways to tickle the palate. And behold, many of these amuse bouches are the sauces.

Don’t Let an Cut Avocado Frighten You

I am not afraid to admit that I have let an avocado, innocently minding it’s own business on my counter, get overly ripe. And I mean overly ripe, to the point of being tossed before eaten! The horror! What if I only want half? No matter how hard I try to wrap the other half, seal it, suck the air out of the baggie it’s in…I just know I’ll end up with a brown avocado. No way, won’t do it. Won’t risk it. I’d rather throw it out than see the brown and I’m not proud of that fact. Now, my daughter Tara doesn’t mind the brownness at all (God bless her), but I can’t get over it and won’t eat an avocado unless it’s avocado green. Yes, I’m a wasteful avo-snob, but…I have found a way to have my avocado and eat it too…enter, whipped avocado sauce!

For some reason, it doesn’t turn brown (at least after 24 hours) and whatever the reason, I’m tickled about this. I thought it must be the lime, but I use lime in guacamole and that turns brown rather quickly for me (even with the most meticulous wrapping), so who knows? What I do know is that this simple, 5 ingredient whipped avocado sauce is easy to prepare and soooo yummy, you may not even have any leftover.

Whipped Avocado Sauce – V and GF

Ingredients
  • 1 ripe avocado
  • 1 clove garlic
  • 1/4 cup fresh cilantro
  • 2-3 tablespoons soy milk or other non-dairy milk
  • juice of half a lime
  • salt and pepper to taste
Instructions
  1. Process garlic clove to mince.
  2. Add avocado and cilantro and pulse until smooth.
  3. Add lime juice, pule until incorporated.
  4. Add soy milk and pulse until you reached desired fluffiness.
  5. Salt and pepper to taste.
